White asparagus is a gourmet delicacy prized for its tender texture and delicate flavour. Plant asparagus crowns in early spring, burying them 15-20cm (6-8 inches) deep in fertile, well-drained soil. Space crowns 30-40cm (12-16 inches) apart in a sunny location. Keep soil mounded over the emerging shoots to maintain their white colour. Allow the plants to establish for two years before harvesting. Pick spears when they are about 20cm (8 inches) tall. Perfect for steaming, roasting, or serving with hollandaise sauce.
